Dairy innovation and consumer trends
Niamh Kelly, Chief Commercial Officer for Dairy Nutrition at Glanbia, was recently featured on the Dairy Download, the podcast from the International Dairy Foods Association.
During the discussion, Niamh shared insights into the evolving dairy landscape, highlighting shifts in consumer behaviour, nutrition priorities, and innovation across the industry.
Dairy consumption: a changing landscape
Niamh explained that dairy consumption patterns are continuing to evolve as consumers increasingly look for products that deliver both nutrition and taste.
She describes how Glanbia’s dairy nutrition business has grown and developed over time, adapting to changing consumer demands and trends. This evolution includes a diverse portfolio that ranges from traditional dairy operations such as cheese production to specialised nutritional ingredients and the development of the company’s colostrum business.
The role of innovation
Innovation continues to play a critical role in the dairy sector. As consumers become more informed about the nutritional value of the foods they consume, they are increasingly willing to invest in products that deliver clear health benefits.
One emerging consumer group is those using GLP-1 medications, who are particularly focused on maintaining muscle mass while managing weight. These consumers are actively seeking high-quality protein and functional nutrition products that help support their overall wellbeing.
A key theme of the conversation is how value is being redefined in the dairy space. Today’s consumers — particularly younger, discerning snackers — are not willing to compromise on taste, even when seeking functional nutrition benefits. Protein bars are a clear example of this trend. For these products to succeed, they must combine high-quality protein with great taste and texture, ensuring the protein is delivered as part of a genuinely enjoyable food experience.
